Herb Salsa

Any combination of soft herbs such as basil, dill, mint and parsley will work in this salsa.
INGREDIENTS
1/3 cup each packed mint and flat-leaf parsley
2 teaspoons grated fresh ginger
1 clove garlic, crushed
1 teaspoon Dijon mustard
2 tablespoons rice wine or white wine vinegar
1/3 cup vegetable oil
1-2 teaspoons runny honey
sea salt and freshly ground pepper
METHOD
Place all the ingredients in a food processor and blend until smooth. Season and add a little more honey if needed to balance the dressing.
