Cucumber Cooler

INGREDIENTS
1 x 4 inch section of telegraph cucumber, peeled
handful of mint leaves
4 lime wedges
30 mls apple juice
soda water or sparkling mineral water
METHOD
Muddle the cucumber, mint and lime in a mixing glass. Add the apple juice, shake and strain. Top with soda water or sparkling mineral water. Garnish with a cucumber twist.
* To make an alcoholic version – add Zubrowka Bison Grass vodka for a kick
