The Foley Wine Club Drop of the Day

Lighthouse Gin is one of New Zealand’s oldest craft gins, renowned for it’s pure yet complex nature – a perfect match for the seafood in this classic Spaghetti allo Scoglio.
Inspired by the spectacular Cape Palliser Lighthouse on the southernmost tip of the North Island, Lighthouse Gin is easy to spot with its distinctive, stylish striped bottles, echoing the lighthouse itself. Its recipe, perfected over many years, includes nine botanicals twice distilled and then perfectly blended with water filtering from high in the Remutaka Ranges and emerging in a spring at Palliser Bay. The result is a pure, complex gin with magnificent citrus, a finely spiced creamy palate and a lingering finish. Perfect as a martini (dry, with a twist of lemon), or a classic Gin & Tonic.
Originally established in 2005 by Neil Catherall, Lighthouse Gin is the culmination of years of hard work, research and native botanicals, brought together to create a truly authentic local gin. Founder and Master Distiller, Neil Catherall, spent years researching and experimenting with a variety of native botanicals, including fresh zest from New Zealand grown Navel Oranges and Yen Ben Lemons, to create a unique small batch gin. During his years of research, he designed a 200 litre copper still from scratch and had it built by the local craftsmen. With his custom still built and his botanical formula complete, Neil went to work crafting the first batches of Lighthouse gin. As the production and demand increased, distiller Rachel Hall joined the Lighthouse team in 2010 to assist Neil. Rachel spent the next few years learning as much as she could from Neil before being named Head Distiller in 2014.
