Drop of the Day – Wairau River Estate Rosé 2021

Wairau River Estate Rosé 2021 is the most fun you can have with a glass of wine in your hand this summer!
Summer is about the good times and no wine epitomises that better than Wairau River’s Estate Rosé 2021. This wine truly is summer in a bottle - whether you’re out and about celebrating, enjoying time with friends, eating good food, relaxing at the beach, or sitting on the back porch with a good book! This Rosé has you covered for all occasions.

Wairau River are about having a good time while drinking their Rosé, but they’re also serious about making top quality wine. And boy do they deliver. Their Rosé is made with 100% Pinot Noir and presents itself with subtle floral notes combined with lifted aromas of strawberry and raspberry. These characters translate generously to the palate, which is finely balanced by delicate acidity and an off dry finish.
The fruit of this exceptional wine owes thanks to the warm fine weather through late last summer, which provided exceptionally clean and healthy fruit. And a riper spectrum of tropical fruit flavours. This gave winemakers plenty to work with and they were able to strike the right balance with an extensive array of complimentary blending components to assemble this fantastic Rosé. As a result, the 2021 vintage has wonderful fruit concentration aromatic power and defining elegance. All of which will make this one of the most celebrated years for some time. Now that’s something worth drinking to!

While you’re kicking back this summer, enjoy a glass of the Wairau River Estate Rosé 2021 with friends and a few strawberries in hand or some soft cheese – we recommend a goat’s cheese used in our Baked Goat’s Cheese Toasts, Blackberries and Hazelnuts.
For the main event, however, our Roast Salmon with Pomegranate Glaze and Herby Yoghurt Mayo pairs beautifully with this wine as do our Lamb Cutlets with Salsa Verde.

We start by sharing what’s on the dish team’s radar, what we’re watching, listening to and reading. Harry Butterfield puts a twist on his Nonna’s agnolotti, Malissa Fedele reminds us of the importance of fibre, and Phoebe Holden fulfils a long-held dream, sitting down with Yotam Ottolenghi. Autumn is an abundant time, we make the most with pumpkin, kūmara, cabbage, cauliflower, feijoas, apples and pears. We’re dishing up dinners for two, including a Chicken Dumpling Lasagne, alongside easy weeknight meals. We honour our mums, revisit timeless classics, and add a little baking challenge. This issue, we encourage you to slow down, to enjoy writing your shopping list, and spending time in the kitchen. Because even when life feels relentless, there’s always space to share something delicious.
