Lady Gatsby Daiquiri

An elegant combination of rose petals, Manuka leaves, cinnamon, green tea, Manuka honey, fresh lime juice and white rum, incorporating certified organic tea from award-winning local tea producers Zealong.
Serves: 2
INGREDIENTS
60ml El Dorado 3yo rum
Zealong Lady Gatsby tea, a blend of Manuka leaf, cinnamon, rose petal and green tea
1 heaped teaspoon Manuka honey
20ml fresh lime juice
dehydrated lime wheel or substitute fresh lime
METHOD
To infuse the rum: Take one bottle of rum, add four heaped teaspoons of the Zealong Lady Gatsby tea, combine and let sit for at least an hour, then strain.
Add tea-infused rum, honey and lime juice to a cocktail shaker filled with ice. Shake, taste and adjust if needed.
Double strain into a chilled Coupette glass. Float dehydrated lime wheel on top, or substitute with a slice of fresh lime. Serve immediately.
