Watermelon Fresca

Serves: 6
INGREDIENTS
1 cup vodka
½ cup mint leaves
4 cups chopped watermelon, rind and seeds removed
¼ cup sugar syrup
juice of 2 limes
To serve
ice
slices of lime and sprigs of mint to garnish
METHOD
Use a mortar and pestle to mash the mint leaves.
Place the vodka, watermelon, sugar syrup, lime juice and mint in a blender and process until smooth. If you prefer a clear syrup, strain the mixture through a sieve, or serve as is for a slushy-like texture.
Tip the mixture into a pitcher and stir to combine.
Place ice cubes in 6 glasses, pour over the mixture and garnish with a slice of lime and a sprig of mint.
