Fruity Soft Serve Ice Cream

This is a really simple and delicious ice cream that can be made with a wide variety of fruits.
INGREDIENTS
3 cups frozen fruit (use berries or chopped stone fruit such as mango, peaches, plums, cherries, apricots and nectarines)
1 cup thick coconut cream (I used Kara brand)
1 tablespoon lime or lemon juice
1 tablespoon icing sugar or honey or more to taste
You do need a food processor or blender to get it super smooth and the fruit needs to be well frozen first. I’ve made this recipe using blackberries, chopped strawberries and chopped mango. As the fruit all have differing levels of sweetness or sourness, you will need to adjust the sugar to taste for each batch.
METHOD
Combine all the ingredients in a food processor or blender and process until smooth. You will need to stop and scrape down the sides of the bowl several times until it becomes smooth. Taste and adjust the sweetness if needed.
To serve: Spoon into chilled glasses and eat straight away for a soft serve ice cream or transfer to a freezer-proof container and freeze for up to an hour for a firmer texture.
Cook’s Tips: The ice cream will freeze solid if made a few days ahead. To serve, remove from the freezer and allow it soften just enough to chop into chunks. Place in the food processor and process again until it becomes smooth and shiny.
